Take a field trip through your special person's bathroom/closet when they're not home. Be mindful while looking, don't drop anything, and do your best to put everything back where you found it. You're looking for ALMOST EMPTIES or DUPLICATES.
Almost Empties: The bottles and items that are right out on the counter, or in the drawer, etc., and are almost empty. This means she uses it enough for it to be empty and the chances she likes it are pretty high. Go to the store and find her either another of the same things (or two!), or the same but in a different flavor. *If it's makeup, don't switch shades, only vary your sizes!
*Duplicates: "Use your personal odds". on this one. When you look in her area and see that that are multiples of the same thing or lots of scents/flavors of the same product, this is a safe bet in my opinion that she likes it quite a bit. If you don't want to add to the stache you can store this gift for the future, or get her a gift card to where they sell it (Ulta, Sephora, Amazon, Target, etc.)
*"Use your personal odds". When I say this I mean if your partner is quick to buy themselves things as soon as they run out, or they try a lot of different brands and never stay consistent to one enough to want another, or have explicitly told you to spend money on other things like vacation savings or paying off debt, then your odds are pretty good that duplicates would be a good gift.
